A small guide to the temperature of tea

Our name means temperature, so it seemed fair to say something about it. These are common starting points, not rules. Adjust to taste, and to the particular tea.

  • Green tea: roughly 70 to 80 °C. Hotter water tends to bring out bitterness.
  • White tea: roughly 80 to 90 °C.
  • Oolong: roughly 85 to 95 °C.
  • Black tea: roughly 95 °C, close to a full boil.
  • Roasted barley or corn tea: usually made with freshly boiled water and left to steep.

A tip we like: pour the water into the cup first, then into the pot. It warms the cup, and it cools the water by a few degrees along the way.

Whatever you are drinking, let it rest a minute before the first sip. The cup is meant to be held in two hands, and it is pleasant when it is warm rather than hot.
